Alb’ndigas homemade style

Meatballs is one of the dishes that allow you to combine species with very diverse and even can be accompanied by rice, pasta, salad, or fries.

By the way, the term “meatball” comes from the Arabic word al-bunduqa, (it was the arabs that were exported to Europe), which means ball, and there is already talk of them in the writings of history of the SIXTEENTH century.

Ingredients (4 people):

  • 250 g of lean minced pork.
  • 250 g of ground beef.
  • Crumb of bread.
  • Half a large onion or a small one.
  • 2 eggs.
  • 2 cloves of garlic.
  • 1 glass of milk.
  • Chopped parsley.
  • 1/ pill of meat broth.
  • Pepper.

Batter:

  • 250 g of flour
  • 2 eggs
  • 3 dl of oil.

Sauce:

  • A ripe tomato
  • A carrot,
  • An onion
  • A clove of garlic
  • 1/2 dl oil
  • A strand of saffron
  • Salt.

– Difficulty: Difficult.

Preparation:

Peel and chop the onion for the meatballs and the garlic cloves.

Mix in a bowl the meat, the meat, the onions, the garlic, a bit of crumb of bread, a cup of milk and the chopped parsley.

Crumble over the mixture the half pill of meat broth, add two egg yolks and add salt and pepper.

Mix well and leave for an hour and a half.

Sauce

To prepare the sauce, peel and slice the carrots into small slices.

Peel and chop the garlic clove, the onion, the tomato and the strand of saffron.

Heat in a cauldron 1/2 dl of oil. Saute, then the garlic, the onion and the carrot.

When everything is soft, add the tomato and saffron.

Add the salt and leave on a gentle heat.

Strain the sauce with a chinese strainer and pour back to the pan.

Batter

For the batter, whisk two eggs in another bowl and add a bit of salt.

Prepare the balls with the flesh the measure of a tablespoon.

Pass the balls obtained by the egg, then the flour and fry in plenty of oil. (It is recommended that you use a deep frying pan).

Drain the meatballs and put them in the sauce pan.

Warm them for a few minutes and they are ready to serve.
